Recognized for a cuisine that fuses technique, local products, and Asian influences, he is the founder of Yum Cha, a restaurant highlighted among Latin America's 50 Best Restaurants, and creator of Neko San, his most recent project dedicated to Japanese culture through tea, sandos, and onigiris.
