When the harvest ends and the vineyards fall silent, our sheep take over.

A flock of 1,500 sheep roam the fields, feeding on the cover crops we tend all year round.

This winter grazing is much more than a tradition: it's a regenerative practice that improves soil health and brings life back to every corner of the vineyard.

 
Thus, while winter rests, the earth strengthens and prepares to be reborn in spring.
